They come exclusively from the Noia estuary, in A Coruña, the place where the best cockles in the world are found.
It is a bivalve mollusc that lives in salty waters and belongs to the Cardiidae family. They are found buried in soft beds of fine sand and are located from the coastline down to depths of 10 metres.
Recognised for their taste and texture, they are carefully selected and purified before being opened by steaming in seawater.
Our cockles are perfectly placed by hand and washed in the so-called canning liquid (a combination of its own juices and purified seawater they have been cooked in) that should never go to waste.
